Happy Black Friday! For those brave (or crazy) enough to go out and shop hope you survived and found the deals you wanted. I did Black Friday once and it was too crazy for me, but I'm not much of a shopper. I use to be super good about being done all my Christmas shopping by Halloween, I'd find the deals throughout the year. The past few years being out of work, Christmas has been much smaller and more Handmade stuff. Though we have always taught our children that Christmas is about Jesus (as that is its purpose) and being with family and giving than receiving. I've been proud of them the last few years because they still want to give to the charities cause they say we know we have it bad but they know others still have it worse.They were willing to get less gifts to be able to give, my heart just melts every year that they say that and including this year I've told them that there may be very little under the tree. I am doing everything I can to figure out things to make for them. My daughters are easy but my son is the hardest, he really isn't into much besides football especially the Saints and his xbox that he saved for years to buy himself. In any case, today I will have a few post of different stuff for a Handmade Christmas/Holiday Gifts.
My first one today is a delicious Meatball Soup Recipe. This is great for appetizer Or for that busy or lonely friend, neighbor, family or co-worker.
2 medium carrots
2 stalks celery
1 small onion
2 tbsp tomato paste
4 garlic cloves, pressed
1 tbsp Italian Seasoning Mix
1 can (28 oz) crushed tomatoes in puree
2 cups beef broth
1 1/2 cups water
16 frozen fully cooked meatballs
Salt and coarsely ground black pepper
Croutons
1. Peel carrots with Vegetable Peeler. Finely chop carrots, celery and onion with food chopper
2. Lightly spray ( 4qt./4L) casserole with oil and add carrots, celery and onion. Cook over medium heat 4-5 min. or until vegetables begin to brown, stirring occasionally.
3. Push vegetables to one side of casserole. Add tomato paste; cook and stir 1-2 minutes or until tomato paste begins caramelize.
4. Add pressed garlic and seasoning mix: mix will. Stir in tomatoes, broth and water: bring to a simmer
5. Cut meatballs in half using Chef's Knife add to soup. Simmer an additional 10-12 minutes; season to taste with salt and black pepper. Serve hot and garnish with Croutons. if desired.
Yields: 4 Servings
